Cappelli’ wholemeal durum wheat semolina is obtained exclusively by stone milling “Cappelli” durum wheat from cultivations in Molise (Italy). This ancient milling technique allows us to obtain a high quality semolina with an irregular grain size, which fully preserves every part of the grain, especially the bran and the wheat germ.

Cappelli’ durum wheat is considered the ancestor of today’s durum wheat, uncontaminated by mutagenesis. Hence, a product that has not undergone genetic modification, not to give up flavour and traditional content for the benefit of high yield. This is why the product’s SHELF LIFE is set at 4 months.

  • Ideal for the preparation of bread, pasta, pizza and cakes.
  • The low gluten content (but high percentages of lipids, amino acids, vitamins and minerals) guarantees easy digestibility and assimilation. The fibre contained in the bran, which envelops the grain, is an excellent remedy for constipation.

Cappelli’ semolina is obtained from cultivations in Molise of a prized and ancient wheat. Recently rediscovered, it is much appreciated for its digestibility and nutritional qualities.

Durum wheat wholemeal semolina – 5 Kg

Cappelli’ wholemeal durum wheat semolina is obtained exclusively by stone-milling ‘Cappelli’ durum wheat from cultivations in Molise.

This ancient milling technique makes it possible to obtain a high quality semolina with an irregular grain size, which entirely preserves every part of the grain, especially the bran and the wheat germ. In addition, the reduced milling speed prevents overheating, thus better preserving the organoleptic qualities.

Product characteristics:

‘Cappelli’ durum wheat is considered the ancestor of today’s durum wheat, uncontaminated by mutagenesis. Therefore, a product that has not undergone genetic modification, so as not to give up flavour and traditional content to the advantage of high yield.

Undergoing minimal processing, it has a SHELF LIFE (conservation of the product in optimal conditions) of 4 months.
Ideal for the preparation of bread, pasta, pizza and cakes. Pasta and baked products made with Senatore Cappelli wheat have an intense, aromatic fragrance and a rich taste.
